Stua da Legn is the Fine Natural Cuisine restaurant at Lac Salin SPA & Mountain Resort in Livigno. As the town's first vegetarian and vegan restaurant, it is the creation of Chef Andrea Fugnanesi and was conceived as a natural extension of the hotel's philosophy: well-being, a deep connection to the local area, and nature, all expressed through the language of refined, plant-based cuisine.
Nature: A Philosophy, Not a Trend
At Stua da Legn, the cuisine is entirely vegan by vocation, not by restriction. This distinction is more than a matter of words: it reflects the belief that the complexity of flavour comes not from what is left out, but from the depth of knowledge, respect, and craftsmanship applied to what the land and forests have to offer.
With each passing season, the menu evolves towards an ever more holistic vision of plant-based cuisine, continually pushing the boundaries of culinary research while remaining deeply rooted in the landscape from which every dish is born.
Zero Waste
The guiding principle is zero waste—a philosophy that is not a statement of intent, but a structural method. Kitchen by-products are transformed into ferments, stocks, broths, and infusions; every ingredient is given a new purpose before it leaves the kitchen.
It is the farming wisdom of Valtellina reimagined for the present through contemporary techniques—the same culture that wasted nothing, transforming scarcity into nourishment, and nourishment into culture.
A Local Ecosystem
1. Green Key
Lac Salin SPA & Mountain Resort is Green Key certified—the leading international eco-label awarded to hospitality businesses that embrace responsible management. The certification recognises the use of renewable energy, tangible waste reduction, and a carefully selected network of suppliers chosen for both their environmental commitment and their strong local roots.
It is a certification that cannot be claimed—it must be earned through daily decisions that are measurable, transparent, and independently verified.
2. Ingredients
Every ingredient is sourced through a network of local producers built over time on direct relationships, transparency, mutual trust, and continuous dialogue—without intermediaries, without distance.
Buckwheat flour from Chiuro, fruit from Vanari: every ingredient has a name, a place, and a traceable story. This is more than a short supply chain; it is first-hand knowledge of both the product and the people behind it.
3. Alpine Herbs
Alpine herbs deserve a chapter of their own, approached with the same respect reserved for the world's finest crus. Dandelion, mountain pine, and lovage are gathered through responsible foraging across the surrounding landscape, in close collaboration with the SPA Manager at Lac Salin.
During the summer months, when the mountains are at their most generous, fermented turnips, seasonal preserves, and freshly foraged ingredients replenish a living pantry that evolves week by week, following the rhythm of life at high altitude.

Andrea Fugnanesi and His Brigade
Andrea Fugnanesi's culinary journey began long before Livigno—in the rolling hills of Umbria, where a close relationship with the land and its harvest first shaped his vision. It was in Livigno, however, that this philosophy found its most natural expression. His encounter with Lac Salin SPA & Mountain Resort, a place deeply rooted in Alpine nature and dedicated to well-being, inspired a clear direction: to explore plant-based cuisine not as a stylistic choice, but as a form of care.
Years of experimentation with alpine herbs, roots, fermentation, and high-altitude ingredients have given rise to a cuisine in which every dish is designed to nourish—in the broadest sense of the word. It is a cuisine that does more than complement the wellness experience of the SPA; it is an essential part of it, sharing the same rhythm, the same intention, and the same mountain spirit.
Alongside him every day is Resident Chef Domenico Cassanelli, originally from Puglia, whose infectious enthusiasm fuels the kitchen's creative process. A longstanding member of the Lungolivigno project, Cassanelli works closely with Fugnanesi to develop and refine the plant-based dishes that shape the menu season after season. It is through their daily exchange—testing, tasting, debating—that ideas become recipes, and recipes become memorable experiences.
Completing the culinary journey is Pastry Chef Federica Bagnarelli, finalist for the EmergentePastry 2025 award. Her desserts are an expression of deep respect for the territory, crafted with Alpine herbs, locally sourced ingredients, and high-altitude botanicals. Each creation is designed to extend the meaning of the meal beyond the final bite, leaving a lasting impression of both flavour and place.
